- 1250 ml Dashi (Japanese style soup base)
- 1 pack Spinach
- 1 one block Tofu
- 3 Eggs
- 4 tbsp Shiro-dashi
- 1 tbsp Mentsuyu
Directions

1In a pot, add the water, granulated dashi and diced tofu and bring to a boil.

2Cut the ends off of the spinach.

3Wash well and cut into 3 cm pieces.

4Once the water starts boiling, add the spinach.

5Beat the eggs in a bowl and add 1 ladleful of the soup and mix well.

6Drop the eggs in the pot like drawing circle.

7When the eggs start to form, it's done.

8It's okay if the eggs are not fully cooked.

9They will be cooked with the remaining heat.

10Here's the komatsuna version.

11It has more texture than spinach and is good too!

12This is the okura, leftover konatsuna and kamaboko version.
