Ingredients
- 1 kg flour
- 20 grams salt
- 1/2 liter sparkling water
- 1 tbsp olive oil, extra virgin
- 20 grams yeast
- 150 ml water
- 1 liter tomato passata/puree
- 1 tsp sugar
Directions

1Put yeast in tepid water and stir (not more than 50C) then let it rest for 10 minutes

2Put flour in a large bowl

3Melt salt in sparkling water and add it to the flour

4Add olive oil and stir

5Add melted yeast to the dough and knead for at least 10 minutes

6Form dough into balls and let them rest for 3 hours

7Grease a baking tray and stretch a ball of dough in it, then let it rest for 2 hours

8Warm a bit tomato puree/passata in the microwave or in a pan (just a bit, it shouldn't be too hot) and season to taste using salt, pepper and sugar)

9Spread tomato puree on dough

10Add oregano
-
11Bake at 200C for 20 minutes

12Add mozzarella
-
13Finish baking for other 5 minutes
