- 3 slices bacon in 1-inch pieces
- 1/2 c. water
- 1 egg, beaten
- 2 Tbsp. all-purpose flour
- 2 Tbsp. wine vinegar
- 2 tsp. sugar
- salt and pepper
- young dandelion leaves
Directions

1Saute bacon until browned.

2Add water to bacon and drippings. Combine egg, flour, vinegar and sugar; mix well.

3Add to bacon and water, stirring constantly.

4Season with salt and freshly ground pepper.

5Cook, stirring constantly, until dressing is thickened. Pour over greens just before serving and toss quickly.
