Dandelion Dressing

  • 3 slices bacon in 1-inch pieces
  • 1/2 c. water
  • 1 egg, beaten
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. wine vinegar
  • 2 tsp. sugar
  • salt and pepper
  • young dandelion leaves

Directions

    Saute bacon until browned.

    Add water to bacon and drippings. Combine egg, flour, vinegar and sugar; mix well.

    Add to bacon and water, stirring constantly.

    Season with salt and freshly ground pepper.

    Cook, stirring constantly, until dressing is thickened. Pour over greens just before serving and toss quickly.
