- 2 c. sifted all-purpose flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1/3 c. sugar
- 1/2 c. cut up pitted dates
- 1 egg
- 1/4 c. vinegar
- 3/4 c. milk
- 1/3 c. melted shortening, cooled
Directions

1Sift together the flour, salt, baking soda and sugar.

2Add dates; combine well with dry ingredients.

3Combine egg, vinegar and milk; stir in shortening.

4Add to dry mixture all at once. Stir until dry ingredients are just dampened, not smooth.

5Spoon batter into greased muffin pans, filling 2/3 full.

6Bake in a 425° oven for about 20 minutes.
