  • 2 c. sifted all-purpose flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/3 c. sugar
  • 1/2 c. cut up pitted dates
  • 1 egg
  • 1/4 c. vinegar
  • 3/4 c. milk
  • 1/3 c. melted shortening, cooled

Directions

    Sift together the flour, salt, baking soda and sugar.

    Add dates; combine well with dry ingredients.

    Combine egg, vinegar and milk; stir in shortening.

    Add to dry mixture all at once. Stir until dry ingredients are just dampened, not smooth.

    Spoon batter into greased muffin pans, filling 2/3 full.

    Bake in a 425° oven for about 20 minutes.
