- 1 lb. chopped dates
- 1 c. sugar
- 1/2 c. shortening
- 2 egg yolks
- 1 c. chopped nuts
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. soda
- 1/2 tsp. baking powder
- pinch of salt
- 2 egg whites, beaten stiff
Directions

1Cover chopped dates with 1 cup boiling water.

2Let stand 1 hour.

3Stir 3 times.

4In large bowl, mix sugar, shortening, egg yolks, nuts and vanilla.

5Add date mixture and stir well.

6Add flour, soda, baking powder and salt; mix well.

7Add beaten egg whites and fold in lightly.

8Pour batter into angel food cake pan, well-greased and floured.

9Bake at 350° about 1 hour.

10Let stand in cake pan for 10 minutes.

11Turn out and finish cooling.
