  • 1 c. pitted dates, chopped fine
  • 1 1/2 c. boiling water
  • 2 Tbsp. shortening
  • 1 c. sugar
  • 1 egg
  • 2 1/2 c. flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 to 1 c. nuts
  • 1/2 tsp. vanilla

Directions

    Cut up dates into small pieces.

    Put dates and shortening into large bowl and pour boiling water over them.

    Let mixture sit for 5 minutes.

    Add all other ingredients.

    Mix just until blended. Bake at 325° for 45 minutes or until done in 2 greased loaf pans. After baking, cool on wire rack.
