Date Nut Bread

Ingredients

  • 8 oz. pitted dates
  • 2 tbsp. butter
  • 1 cup soft brown sugar
  • 1 tsp. baking powder
  • 1 cup boiling water
  • 2 cups bread flour
  • 1 dash of salt
  • 1/4 tsp. bourbon vanilla extract plain will also do.
  • 1/2 cup chopped and toasted pecans
  • 2 egg whites.

Directions

    Chop the dates in a food processor until it sticks together and forms a ball.

    Put the chopped dates in a mixing bowl with the butter, brown sugar and then the boiling water and just stir to break up the ball of dates and let sit for 10 minutes.

    Then add the rest of the ingredients.

    Mix until smooth.

    Pour into a greased and floured loaf pan.

    Bake at 325F.

    for 1 hour until a knife pulls out cleanly.

    Let cool for 10 minutes then turn out on to a cooling rack for an hour to cool.
