Date Nut Cherry Cake

  • 1 (10 oz.) jar maraschino cherries (whole or halves)
  • 1 (8 oz.) pkg. pitted dates (whole or halves)
  • 1 c. chopped nuts
  • 1 c. flour
  • 1/2 tsp. baking powder
  • pinch of salt
  • 4 eggs
  • 1 c. sugar
  • dash of vanilla extract

Directions

    Beat eggs and vanilla in bowl.

    In another bowl, mix sugar, flour, baking powder and salt.

    Add fruit and nuts into this mixture.

    Blend fruit mixture into egg mixture.

    Add this mixture to flour mixture.

    Grease a 5 x 9-inch loaf pan.

    Line pan with brown paper bag and grease it.

    Pour batter and spread evenly. Bake at 325°

    for 1 hour and 30 minutes or until done.

    If desired, sprinkle with shot of whisky over top of cool cake. Freezes well, wrap in foil to freeze.

    Don't put liquor on, if freezing.
