- 3/4 c. flour
- 2 Tbsp. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/4 c. corn meal
- 1 egg
- 1 c. whole or 2% milk
Directions

1Sift flour, sugar, baking powder and salt together.

2Add corn meal. Separately beat egg, then add milk.

3Melt 3 tablespoons butter in 8 x 8 x 2-inch pan in preheated 425° oven (about 3 minutes).

4Coat pan with melted butter.

5Pour remainder over dry mixture.

6Add milk and egg mixture.

7Mix with spoon until thoroughly moistened.

8Don't overdo! Pour into pan and bake 20 to 25 minutes, until toothpick comes out clean (crisp top; not too dark).
