- 5 lb. ground deer meat
- 1/3 c. Tender Quick Morton meat cure
- 1/4 c. brown sugar
- 2 Tbsp. liquid hickory smoke
- 1 Tbsp. black pepper
- 1 1/2 Tbsp. mustard seed
- 1/2 to 1 Tbsp. garlic powder
- 1/2 to 2 Tbsp. crushed hot pepper
Directions

1Mix meat and Tender Quick meat cure.

2Refrigerate overnight. Mix all other ingredients into the meat.

3Mix well.

4Roll in 3 to 4-inch rolls.

5Bake on a cookie sheet at 250° to 300° for 2 to 2 1/2 hours.

6Turn rolls every 30 minutes.

7Makes 4 rolls.
