  • 1 1/2 c. oatmeal
  • 2 c. boiling water
  • 1 c. sugar
  • 1/2 c. packed brown sugar
  • 2/3 c. vegetable oil
  • 3 eggs
  • 2 grated carrots
  • 2 c. sifted all-purpose flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. salt
  • 2 tsp. cinnamon
  • 1 c. chopped nuts
  • 1 pkg. coconut pecan frosting mix

    Preheat oven to 325°.

    Grease a 13 x 9 1/2 x 2-inch pan.

    Put oats and boiling water in a bowl; let stand.

    Combine sugars, oil and eggs well.

    Stir in oatmeal; mix well.

    Sift flour, soda, salt and cinnamon together; add to oatmeal mixture.

    Stir in nuts. Spread in prepared pan.

    Bake for 50 to 60 minutes, or until done. Remove from pan.
