  • 1/2 c. shortening
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 3/4 c. white corn syrup
  • 1/4 c. water
  • 1 pkg. mincemeat
  • 1/2 c. water

Directions

    Cook mincemeat with 1/2 cup water.

    Stir well, cooking until mix is almost dry (3 minutes).

    Cool and set aside.

    Mix shortening and dry ingredients into bowl.

    Add eggs, syrup and 1/4 cup water; beat 2 minutes.

    Add cooled mincemeat, beating 1 minute more.

    Bake in 8-inch square pan or tube pan.

    Bake at 350° for 50 to 60 minutes.

    Top with powdered sugar and water glaze with slivered almonds.

    Very moist cake, spicy a He Man cake.
