  • 4 whole Medium-sized Beets In Assorted Colours
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Sherry Vinegar
  • 1/4 teaspoons Kosher Salt
  • 1/8 teaspoons Freshly Cracked Black Pepper
  • 1 Tablespoon Shallot, Minced
  • 4 cups Arugula Or Mixed Greens
  • 1/2 cups Crumbled Goat Cheese
  • 1/2 cups Pine Nuts
