- 6 lb. frying chicken
- 1 1/2 c. Parmesan cheese
- 1/2 c. grated onion
- 1/2 tsp. pepper
- 2 c. crushed crackers, chopped
- 1/4 c. fresh parsley
- 1 Tbsp. salt
- 2 sticks 3 Tbsp. butter
Directions

1Preheat oven to 375°.

2Rinse and dry chicken.

3Roll crackers until crushed; combine grated onion, chopped parsley, Parmesan, salt and pepper in bowl, blending well.

4Melt butter.

5Dip chicken in cracker mixture.

6Place chicken on aluminum foil covered baking tray.

7Sprinkle onion, parsley and cheese mixture onto chicken. Pour melted butter over all pieces.

8Cover chicken for 40 minutes; then remove.

9Cook, uncovered, for another 25 minutes until tender.
