- 8 medium potatoes
- 8 Tbsp. butter, divided
- 6 Tbsp. flour
- 2 1/2 c. light cream
- 1/2 tsp. salt
- dash of pepper
- 1 c. grated sharp Cheddar cheese
- 1/2 c. Italian bread crumbs
Directions

1Preheat oven to 400°.

2Wash, peel and dice potatoes; boil potatoes until done (not mushy).

3Drain and place in lightly greased 2-quart casserole dish.

4Melt 6 tablespoons of butter in medium saucepan; blend flour, then gradually add cream.

5Stir constantly; heat to a boil. Add salt and pepper.

6Pour over potatoes.

7Top with grated cheese.

8Melt remaining 2 tablespoons butter; stir into bread crumbs.

9Mix until coated; sprinkle over casserole.

10Bake for 20 to 30 minutes, until bubbly.
