- 8 medium potatoes
- 6 Tbsp. flour
- 8 Tbsp. butter or margarine
- 2 1/2 c. light cream or half and half
- 1/2 tsp. salt
- dash of black pepper
- 1 c. grated sharp Cheddar
- 1/2 c. bread crumbs
Directions

1Preheat oven to 400°.

2Wash, peel and dice potatoes.

3Boil in lightly salted water until just done, but not mushy.

4Drain potatoes and place in 2-quart greased casserole dish.

5In medium saucepan, melt 6 tablespoons butter and blend in flour.

6Gradually add cream, stirring.

7Heat to boiling, stirring constantly. Season with 1/2 teaspoon salt and a dash of pepper.

8Pour over potatoes and top with grated cheese.

9Melt remaining 2 tablespoons butter, stir in bread crumbs, mixing until coated.

10Sprinkle over top of potatoes.

11Bake for about 30 to 35 minutes.
