- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 14 cup sugar
- 2 12 teaspoons baking powder
- 34 teaspoon salt
- 12 teaspoon baking soda
- 1 egg
- 1 egg yolk
- 1 14 cups buttermilk
- 13 cup canola oil
- 34 cup whole kernel corn
- 12 cup butter, softened
- 2 -3 tablespoons honey
Directions

1In a large bowl, combine the first six ingredients.

2In another bowl, whisk the egg, egg yolk, buttermilk and oil.

3Stir into dry ingredients just until moistened.

4Fold in corn.

5Fill greased muffin cups three-fourths full.

6Bake at 400 for 18-23 minutes or until a toothpick comes out clean.

7Cool for 5 minutes before removing from pan to a wire rack.

8In a small bowl, beat butter and honey until blended.

9Serve with muffins.
