Deluxe Spinach Balls

Ingredients

  • 2 pkg. frozen chopped spinach
  • 4 eggs, beaten
  • 2 c. herb stuffing (1 pkg.)
  • 1/2 c. Parmesan cheese
  • 2 garlic cloves, minced
  • 1 chopped onion
  • 1 1/2 tsp. thyme
  • 3/4 c. butter, melted
  • 1 tsp. tarragon

Directions

    Cook spinach (according to package directions).

    Drain and squeeze dry.

    Mix together all ingredients.

    Chill for 2 hours. Roll into balls.

    Freeze on cookie sheets.

    When frozen, store in plastic bags until needed.

    Thaw before baking.

    Bake at 300° for 30 minutes (don't overbake).
