  • 3 cups broccoli florets
  • 2 medium carrots, cut in half lengthwise and then sliced in 1/8 inch slices
  • 1 large red bell pepper, large dice
  • 2 cups small mushrooms, stemmed and cut in half
  • 1/8 - 1/4 cup fresh cilantro, chopped
  • 2 tablespoons butter
  • salt and pepper

    Steam the vegetables for 5 to 6 minutes or until partially cooked, set aside.

    Melt the butter in a skillet, add steamed vegetables and cilantro; quickly saute until almost tender.

    Sprinkle with salt and pepper and serve immediately. The vegetables should remain slightly crunchy for best flavor.
