Ingredients

  • 4 to 6 medium pork chops
  • 1 large onion, chopped
  • 1 (14 oz.) can whole tomatoes
  • 1/2 bell pepper, chopped
  • 1 rib celery, chopped
  • 1/2 c. green onion tops, chopped
  • 1/2 c. parsley, chopped
  • salt and pepper to taste
  • 2 (6 oz.) pkg. wild rice

Directions

    Brown chops and onion in large skillet.

    Add next 6 ingredients.

    Cook for 20 minutes over low heat.

    Add wild rice to chops using 1/2 amount of the water called for on package.

    Stir well.

    Cook covered for 30 minutes until liquid is gone.

    Serves 4 to 6. You may substitute chicken for the pork chops, but the skin should be removed.
