  • 3 lb. chicken wings
  • 3 to 4 slices firm white sandwich bread, decrusted
  • 2 tsp. mustard seeds
  • 1/2 c. Dijon mustard
  • 2 Tbsp. vegetable oil
  • 2 tsp. white wine vinegar
  • 1 tsp. kosher salt
  • 1/4 tsp. cayenne
  • 3/4 c. or 3 oz. freshly grated Parmesan
  • salt and pepper

    Prepare and clean wings. In food processor, finely grind bread. Measure out 1 1/2 cups bread crumbs. Grind mustard seeds to fine.
