- 2 eggs (raw)
- 2 eggs, hard-boiled
- 3 Tbsp. vinegar
- 3 Tbsp. butter
- dash of cayenne pepper
- dash of salt
- 1 tsp. Colman's dry mustard
- 1 1/2 c. boiling water
- 1 lb. claw crabmeat
- 2 c. bread crumbs
Directions

1Smooth yolks of hard-boiled eggs in vinegar, mustard and melted butter.

2Add seasoning.

3Add boiling water, crabmeat, 2 raw egg yolks and bread crumbs.

4Chop boiled egg whites fine and add to meat.

5Whip raw egg whites and add whipped egg whites.

6Fill greased muffin pan and dot each crab cake with 1/4 teaspoon butter.

7Use medium heat until browned.

8Serve with lemon juice.
