- 1 c. crabmeat
- 1 c. fine bread crumbs
- 1 Tbsp. salt
- yolks of 2 hard-boiled eggs
- 1/2 c. milk
- pinch of mustard
- pinch of cayenne
- 1/4 c. melted butter
Directions

1Finely shred crabmeat.

2Mix crabmeat well with the bread crumbs moistened with the milk, the yolks of the hard-boiled eggs rubbed through strainer, mustard, salt, pepper and melted butter.

3Fill the timbales or small dishes with the mixture.

4Sift very fine bread crumbs lightly on top; dot with butter.

5Brown quickly in a hot oven, being careful they do not burn.
