- 1 -2 tablespoon oil
- 1 onion, peeled and sliced thinly
- 1 teaspoon minced fresh garlic
- 12 lb button mushroom, halved
- 6 boneless chicken thighs, skin removed
- 12 cup white wine
- 1 can tomato soup
- 3 -5 sprigs fresh thyme or 1 teaspoon dried thyme
Directions

1Heat the oil in a large lidded frying pan and quickly cook the onion, garlic and mushrooms for about 3-4 minutes or until lightly browned, set aside.

2Add the chicken fillets to the pan and brown quickly over high heat.

3Add the wine to the pan.

4Return the vegetables and add the tomato soup and the thyme.

5Cover and simmer gently for 30 minutes or until chicken is tender.
