  • 3 c. flour
  • 3-1/2 tsp. baking powder
  • non-nutritive sweetener (equivalent to 3/4 c. sugar)
  • 1-1/2 tsp. salt
  • 1/3 c. diet margarine
  • 2 tsp. grated orange peel
  • 2 eggs
  • 1 c. skim milk
  • 1 c. raisins
  • 1/2 c. nuts, chopped

Directions

    Preheat oven to 350°. Sift dry ingredients together. Add margarine, orange peel, eggs and skim milk, mix until blended. Stir in raisins and nuts. Place in a 3 x 5 x 9 inch well greased loaf pan. Bake one hour and 15 minutes or until loaf test done. Remove from pan, cool and store 12 hours before cutting.
