Ingredients

  • 1 Tbsp. plus 2 tsp. vegetable oil
  • 2 1/2 c. chopped onions
  • 5 c. chunky salsa
  • 15 oz. can rinsed, drained red kidney beans
  • 15 oz. cooked sirloin steak, cut in 1/2-inch pieces
  • 1/8 tsp. pepper
  • 1 c. tomato juice

Directions

    In 4-quart saucepan, heat oil.

    Add onions and cook over medium heat, stirring occasionally, until softened, about 5 minutes.

    Add salsa, beans and tomato juice; stir to combine. Reduce heat to low and let simmer until flavors blend, 20 to 25 minutes.

    Add steak and pepper and stir to combine.

    Cook until steak is heated through, about 10 minutes.

    Store 3/4 cup servings of chili in resealable freezer bags for up to 1 month.

    Each 3/4 cup serving provides 1/2 fat, 2 proteins and 1 1/2 vegetables.
