  • 1/2 pkg. (6 oz.) No Yolk noodles
  • 1 c. (8 oz.) lemon low-fat yogurt
  • 1/2 c. reduced-calorie cholesterol free mayonnaise
  • 2 tsp. curry powder
  • 1/4 tsp. ground ginger
  • 1/2 tsp. salt
  • 2 c. (about 8 oz.) bite-size cooked chicken pieces
  • 1 (11 oz.) can mandarin oranges, drained
  • 1 1/2 c. seedless red or green grapes
  • 1 c. thinly sliced celery
  • 1/2 c. finely chopped red onion

Directions

    Cook noodles according to package directions without salt. Meanwhile, combine yogurt, mayonnaise, curry powder, salt and ground ginger in a large bowl.

    Add chicken, oranges, grapes, celery and onion to dressing mixture.

    Drain noodles and add to chicken mixture; toss gently to combine.

    Cover and refrigerate 1 hour before serving.
