Dijon Glazed Carrots

- 3 cups baby carrots
- 2 tablespoons butter
- 2 tablespoons light brown sugar, packed
- 2 tablespoons Dijon mustard
- parsley, chopped
Directions

1In a covered medium saucepan, cook carrots in small amount of boiling water for 8 to 10 minutes or until tender-crisp.

2Drain.

3Remove from pan; keep warm.

4In same saucepan, over medium heat, melt butter.

5Stir in brown sugar and mustard until combined.

6Stir in carrots.

7Cook and stir for 2 minutes or until carrots are glazed.

8Sprinkle with parsley.
