  • 2 medium carrots
  • 1 medium onion
  • 2 Tbsp. fresh dill
  • 12 thin lemon slices
  • 4 skinless chicken breasts
  • 1 medium zucchini
  • 2 medium red potatoes
  • 2 Tbsp. scallions
  • 1 c. chicken broth

Directions

    Thinly slice carrots, zucchini, onion and red potatoes.

    Divide carrots, zucchini, onions and potatoes into equal portions.

    Place chicken breast in middle of plate.

    Arrange vegetables.

    Season lightly with salt and pepper.

    Put fresh dill and scallions over each serving.

    Cover with 3 lemon slices.

    Cover with paper towels. Pour 1/4 cup chicken broth over each bundle to moisten and cook on High for 10 minutes, until chicken in white throughout and potatoes are done.
