- 4 lb. raw rice
- 4 lb. red onions
- 1/4 c. shortening or bacon drippings
- 2 pkg. frozen gizzards and livers
- salt to taste
- 5 cloves garlic
- 3 bunches green onions
- 2 pods red pepper
- 1/4 bunch parsley
- 9 c. water
Directions

1Cook rice until almost done.

2Cut up red onions very fine and brown in shortening.

3Cut up giblets and put in with onions; cook until brown.

4Add garlic, cut very finely.

5Chop green onions with tops and parsley and add to the mixture along with salt, red pepper and water.

6Pour over cooked rice.

7When the water is absorbed, put in a large baking pan.

8Dot with butter and brown in 350° oven for 15 minutes, if desired.

9Serves 30 to 40 people.
