- 2 c. sugar
- 1/2 c. Karo light corn syrup
- 1/2 c. water
- 1/2 tsp. salt
- 2 egg whites
- 1 tsp. vanilla
- 1 c. finely chopped pecans
Directions

1In heavy 2-quart saucepan stir together sugar, corn syrup, water and salt.

2Cook over medium heat, stir constantly until mix boils.

3Reduce heat and cook without stirring until temperature reaches 248° on candy thermometer or until it forms a firm ball when you drop in some cold water.

4Just before temperature reaches 248°, beat egg whites in large bowl until soft but not dry.

5Beat constantly on high speed, slowly pour about 1/2 of the hot syrup over egg whites.

6Cook remaining syrup to 272°, until mixture dropped in very cold water separates into threads which are hard, but not brittle.

7Beating constantly, pour syrup over first mixture, about 1 teaspoon at a time.

8Beat well after addition. Beat until mixture looks like it is glossy.

9Serves 8.
