- 1/2 c. light corn syrup
- 2 1/2 c. sugar
- 1/4 tsp. salt
- 1/2 c. water
- 2 egg whites, room temperature
- 1 tsp. vanilla
- 1 c. chopped nuts
Directions

1Combine first 4 ingredients in a heavy saucepan over medium heat, stirring constantly, until sugar is dissolved.

2Cook without stirring to firm ball at 240° with candy thermometer. Beat egg whites until stiff, but not dry.

3Pour about 1/2 of sugar mixture over egg whites, beating constantly.

4Cook remaining syrup to soft crack, 270°.

5Add syrup slowly to first mixture, beating constantly until mixture holds its shape.

6Add vanilla and nuts. Drop by spoonful onto wax paper.
