- 1 1/4 cups cornmeal yellow
- 1 1/4 cups flour, all-purpose
- 13 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 large eggs beaten
- 1 1/2 cups milk low fat or whole fat
- 1 1/2 stick butter melted
Directions

1Whisk together cornmeal, flour, sugar, baking powder and salt in a large mixing bowl, until well blended.

2Store in airtight containers.

3Whenever you want to have some muffins:

4Preheat oven to 350F (180C).

5Stir the mix with eggs, milk and butter in a large mixing bowl until just incorporated.

6Fill the cups of a greased muffin tin halfway and bake for about 20 minutes until a wooden stick inserted comes out clean.

7Cool in the tin on a wire rack for 5 minutes.

8remove the muffins from tin.

9Serve warm or cool completely on a wire rack and store at an air-tight container or freeze the muffins.
