Do Ahead Mashed Potatoes

  • 8 or 9 large potatoes, peeled
  • 2 (3 oz.) pkg. cream cheese, at room temperature
  • 1 c. dairy sour cream or plain yogurt
  • 2 tsp. onion salt or 1 Tbsp. minced chives
  • 1/4 tsp. pepper
  • 2 Tbsp. butter or margarine
  • grated cheese or paprika

Directions

    To roast a pepper, broil or grill it until it's black all over. Put the roasted pepper in a brown paper bag or wrap in newspaper. Seal tightly.

    After 10 minutes or so, use a knife to peel off the skin and scrape away the seeds.

    Cut the pepper into strips. To store (up to a month), cover with oil in a jar and refrigerate.
