  • 1 tsp. cinnamon
  • 2 c. sugar
  • 1 c. Wesson oil
  • 1 (8 oz.) can crushed pineapple with syrup
  • 1 1/2 tsp. vanilla
  • 3 eggs
  • 2 c. diced, ripe bananas

    Beat eggs.

    Add sugar.

    Beat well.

    Add oil, vanilla, pineapple and juice; beat again.

    Add dry ingredients a little at a time.

    Fold in diced bananas last.

    If you want to use a 9-inch tube pan or a long cake pan, bake tube pan for 1 hour and 20 minutes at 350° or long pan for 1 hour at 350°.
