  • 1/2 c. butter
  • 1 c. powdered sugar
  • 1 c. crushed pineapple, drained in a strainer
  • 2 eggs
  • vanilla wafers
  • 1/2 pt. whipping cream, whipped
  • 2 fresh coconuts, shredded or 2 pkg. frozen coconut

Directions

    Cream sugar and butter.

    Add beaten eggs, then pineapple. Spread mixture between vanilla wafers.

    Cover with whipped cream and roll in coconut.

    Refrigerate.
