Ingredients
- 1 c. parboiled rice, drained
- 1/4 c. scallions
- 2 eggs
- 1/2 c. soy sauce
- 1 c. bean sprouts
- 1/2 to 1 c. steamed small shrimp
- 1/2 to 1 c. shredded chicken (optional)
- 1/2 to 1 c. shredded carrots
- 1/2 Tbsp. cooking oil
Directions

1In large skillet, add cooking oil (make sure to cover the entire bottom of skillet).

2Scramble eggs and set aside.

3In same skillet, add scallions.

4Stir, then add rice and stir.

5Add soy sauce to rice and scallions; stir until the rice turns brown from the sauce.

6Add shrimp; cover and cook for about 1 minute, then add sprouts, eggs, chicken and carrots (if you desire chicken and carrots).

7Heat through and serve.
