- 2 c. self-rising flour
- 1/2 tsp. dry mustard
- 1/8 tsp. ground red pepper
- 2 Tbsp. margarine or butter
- 3/4 c. shredded Swiss cheese
- 3/4 c. buttermilk
- 1 egg
- 1 egg yolk
- 1 Tbsp. water
- grated Parmesan cheese
Directions

1Heat oven to 450°.

2Lightly grease cookie sheet.

3Mix flour, mustard and red pepper.

4Cut in margarine with pastry blender until mixture resembles fine crumbs.

5Stir in Swiss cheese, buttermilk and egg until dough forms.

6Turn dough onto well-floured board; coat with flour.

7Knead lightly 10 times. Roll or pat dough 1/2-inch thick; cut with floured 2 1/2-inch biscuit cutter.

8Place on cookie sheet.

9Mix egg yolk and water; brush over biscuits.

10Sprinkle with Parmesan cheese.

11Bake 10 to 12 minutes or until golden.

12Serve warm.
