Double Cheese Meat Roll

- 1 1/2 lb. ground beef
- 1 egg
- 3/4 c. cracker crumbs
- 1/4 c. finely chopped onion
- 2 (8 oz.) tomato sauce with cheese
- 2 c. shredded Mozzarella or Cheddar cheese
- 1 tsp. salt
- 1/2 tsp. oregano
- 1/8 tsp. pepper
Directions

1Combine the ground beef, eggs, cracker crumbs, onion, 1/3 cup tomato sauce with cheese, salt, oregano and pepper.

2Mix well and shape into a flat rectangle, about 10 x 12-inches, on waxed paper. Sprinkle shredded cheese evenly over meat mixture.

3Roll up like a jelly roll and press ends of roll to seal.

4Bake in shallow baking dish at 350° for 1 hour.

5Drain excess fat.

6Pour remaining sauce with cheese over roll and bake an additional 15 minutes. Makes 4 to 5 servings.
