Double Chocolate Mint Bars

  • 1 3/4 c. flour
  • 1 c. sugar
  • 1/2 c. packed light brown sugar
  • 1/2 c. Hershey's cocoa
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/4 c. oleo
  • 3 eggs, slightly beaten
  • 1/2 tsp. mint extract
  • 2 c. semi-sweet chocolate chips
  • 1 (14 oz.) can Eagle Brand milk

Directions

    Grease 13 x 9 x 2-inch baking pan.

    Stir together flour, sugar, cocoa, baking powder and salt.

    Cut in 3/4 cup oleo until mixture resembles coarse crumbs.

    Beat in eggs and 1/4 teaspoon mint extract; spread into pan and bake 23 to 25 minutes at 350° or until toothpick comes out clean.

    In saucepan, over low heat, melt 1/2 cup oleo with chocolate chips.

    Stir in Eagle Brand milk and remaining 1/4 teaspoon mint extract.

    Pour over baked layer and let stand in refrigerator until set.

    Cut into 24 bars.
