Double-Decker Pasta Salad

Ingredients

  • 8 oz. elbow macaroni, medium shells or other medium pasta shape (uncooked)
  • 2 c. fresh green beans, cut in half, or 1 (10 oz.) pkg. frozen green beans, thawed and drained
  • 1 c. plain low-fat yogurt
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. honey
  • 2 medium carrots, grated
  • 1 red apple, diced (about 1 1/4 c.)
  • 1 (6 1/8 oz.) can white tuna (packed in water), drained
  • 1/4 c. walnuts, chopped
  • 1/2 c. Cheddar cheese, grated

Directions

    Prepare pasta according to package directions and drain. Blanch green beans by cooking in pot of boiling water for 2 minutes.

    Drain and rinse well with cold water.
