Double Spinach Noodles

  • 12 lb spinach noodles
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 12 cups sliced mushrooms
  • 1 lb spinach, stemmed, well washed and chopped
  • 1 cup sour cream
  • 14 cup parmesan cheese, grated
  • 2 teaspoons dried basil or 2 tablespoons fresh basil
  • 12 teaspoon dried oregano
  • 1 pinch nutmeg
  • salt & freshly ground black pepper, to taste

Directions

    Cook spinach noodles al dente and drain.

    Meanwhile, melt the butter in a large skillet until it foams.

    Add the garlic and mushrooms and saute over low heat until the mushrooms are about half done.

    Add the spinach, cover, and saute over low heat until the spinach has wilted.

    Add the cooked noodles and the remaining ingredients and simmer over very low heat for about 10 minutes.
