Ingredients
- 1/2 c. mayonnaise
- 1 egg, beaten
- 1/3 c. minced green pepper
- 3 Tbsp. minced onion
- 1 tsp. dry mustard
- 1/4 to 1/2 tsp. pepper
- 1 lb. fresh lump crabmeat, drained
- about 2 c. fresh breadcrumbs
- 2 Tbsp. butter
- 2 Tbsp. vegetable oil
- tartar sauce (optional)
Directions

1Combine mayonnaise and egg in a large bowl; mix in the next 5 ingredients.

2Stir in crabmeat and 1 to 1 1/4 cups breadcrumbs or enough to hold mixture together.

3Shape into 8 patties.

4Coat patties with remaining breadcrumbs.

5Heat butter and oil in a large heavy skillet; add crab cakes in batches and fry until lightly browned on both sides.

6Serve with tartar sauce.
