- 2 large ripe tomatoes
- 4 eggs
- 1/4 c. shredded Cheddar cheese
- 1/4 c. soft bread crumbs
- 1/8 tsp. pepper
- 1/4 tsp. parsley flakes
- 2 Tbsp. melted butter
Directions

1Cut tomatoes in halves crosswise; scoop out pulp, leaving shells intact.

2Invert to drain.

3Place tomatoes in 8-inch casserole dish.

4Break an egg into each tomato.

5Bake uncovered 15 to 20 minutes at 400° or to desired doneness.
