Ingredients
- 3 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 2 c. sugar
- 3 eggs
- 1 1/2 c. cooking oil
- 1 1/2 tsp. vanilla
- 2 c. diced bananas (about 2 large)
- 1 (8oz.) can crushed pineapple with juice
Directions

1Sift dry ingredients into large bowl.

2Make a well in center and break eggs into it.

3Add oil, vanilla, bananas and last the pineapple with juice.

4Stir, do not beat, until well blended (under mixing will ruin cake).

5Pour batter into well greased (9 or 10-inch) tube pan.

6Bake at 350° for one hour and 20 minutes.

7Cake will crack on top.

8Set pan on rack to cool.

9Run knife blade around edges of pan and turn out to cool.
