  • 4 potatoes, baked and cooled
  • 1 pinch sea salt
  • 1 pinch cayenne
  • 2 c. mild Cheddar cheese, grated
  • 2 c. cashews
  • 1 c. sunflower seeds

Directions

    Cut potatoes in 1-inch cubes and place in a baking dish. Sprinkle with salt and pepper.

    Cover with cheese and sprinkle nuts and seeds on top.

    Bake at 350° until cheese bubbles, about 10 minutes.
