- 1 pinch cayenne
- 2 c. mild Cheddar cheese, grated
- 2 c. cashews
- 1 c. sunflower seeds
Directions

1Cut potatoes in 1-inch cubes and place in a baking dish. Sprinkle with salt and pepper.

2Cover with cheese and sprinkle nuts and seeds on top.

3Bake at 350° until cheese bubbles, about 10 minutes.

4Broil for 2 minutes.
