- 1 large can apricots
- 2 Tbsp. flour
- 3/4 c. sugar
- 2 eggs, beaten
- juice of 1 lemon
- 1/2 lb. cheese, grated
- chopped nuts
Directions

1Drain apricots; reserve juice.

2Chop apricots.

3Combine flour and sugar; stir into eggs.

4Pour into top of double boiler; stir in lemon juice and reserved apricot juice.

5Cook over hot water until thick, stirring constantly.

6Cool dressing thoroughly. Combine apricots, cheese and nuts; spread in shallow mold.

7Pour dressing over top; chill thoroughly.

8Cut into squares to serve.
