- 4 quarts fresh figs
- 1 quart water
- 3 teaspoons salt
- 3 cups sugar
- 1 pint water
- powdered sugar
Directions

1Place figs in 1 quart of water in which salt has been dissolved.

2Let stand overnight.

3Drain.

4Make a syrup of the sugar and 1 pint water.

5Add figs and cook gently until the syrup is m ostly absorbed.

6While cooking, watch carefully!

7Do not stir, but lift kettle and shake figs.

8Put on plates and turn daily until dry.

9Pack in powdered sugar.
