- 4 each duck
- 1 x salt and black pepper
- 3 cups white wine vinegar
- 4 each lemons (for juice)
- 1 cup olive oil
- 2 each garlic cloves pressed
- 2 each onions chopped
- 1 can pimentos chopped
- 3 tablespoons soy sauce, tamari
- 1/2 teaspoon oregano
- 12 strips bacon
Directions

1Wash ducks thoroughly in cold water and dry.

2Season to taste with salt and pepper.

3Combine vinegar, lemon juice, olive oil, garlic, onions, pimento, soy sauce, oregano, salt & pepper.

4Marinate ducks in this mixture at least 8 hours.

5Cook over charcoal fire that has burned down low.

6Close top of grill.

7Cook about 1 1 2/ hours.

8Place 3 strips of bacon on each bird and cook for 30 minutes more.
