- 1/2 red cabbage, chopped
- 1 c. broccoli flowerets
- 1 c. cauliflower flowerets
- 1 c. carrots, sliced
- 1 zucchini, sliced
- 1 lb. fresh mushrooms, sliced
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 can crushed tomatoes
- Tony Chachere's salt-free Creole seasoning
- garlic salt
- salt and pepper to taste
Directions

1Heat oil.

2Brown onions and garlic.

3Add remaining vegetables. Fill pot halfway with water.

4Add seasonings.

5Top with crushed tomatoes.

6Cover and simmer on low 1 hour.

7Stir occasionally. Cook to desired tenderness.
